What you need:
For the wings
1–1.2 kg chicken wings
1 tbsp olive oil or any cooking oil
1 tsp garlic powder
1 tsp onion powder
1 tsp paprika
Salt and pepper to taste
For the hot honey sticky sauce
½ cup honey
2–3 tbsp hot sauce (adjust to your spice level)
1 tbsp soy sauce
1 tbsp butter
1 tsp chilli flakes (optional)
1 tsp lemon juice for brightness
Steps to follow:
Step 1
Pat the wings dry with paper towels; this helps them crisp up. Toss them in olive oil, then season with garlic powder, onion powder, paprika, salt, and pepper. Coat evenly.
Step 2
Oven method:
Preheat to 220 degrees C (425 F).
Spread wings on a baking tray lined with parchment paper.
Bake for 35–45 minutes, flipping halfway through.

Sear the wings in a pan
Heat a large pan on medium-high heat, and add a little oil to lightly coat the pan. Place wings in a single layer (don’t stack) and sear 3–4 minutes per side until golden brown.
They should develop a nice crust before you move on.
Step 3
Once both sides are browned, reduce the heat to medium-low, cover the pan with a lid.
Cook for 12–15 minutes, flipping every few minutes. The lid helps the wings cook evenly without drying out.
Step 4
In a small saucepan, or after removing wings from the pan, melt the butter.
Add honey, hot sauce, soy sauce, and chilli flakes. Simmer 2–3 minutes until glossy.
Stir in lemon juice.
Step 5
Add the cooked wings back into the pan with the sauce, or pour the sauce over the wings in a bowl. Toss until sticky, shiny, and fully coated. Let them simmer in the sauce for 1-2 minutes for extra stickiness.
Serve hot and enjoy topped with sesame seeds, chopped spring onions and extra chilli flakes with rice or fries.
